The Magic of Sweet and Savory: My Moroccan Meatball Tagine with Raisins

This recipe is surprisingly easy to make. Let me show you how it comes together in my Moroccan kitchen.


What You'll Need (The Ingredients)

For the Meatballs (Kefta): Ground beef seasoned and rolled into small bite-sized balls.

For the Base: Lots of diced red onions and plump raisins.

The Spice Palette: Turmeric, paprika, black pepper, and salt.

The Aromatics: Freshly chopped cilantro/parsley and minced garlic.

The Oil: Good quality olive oil.

The Cookware: A traditional clay tagine for slow cooking.


Step-by-Step in My Kitchen

Step 1: 

Heat the Oil and Sauté the Onions
Place your clay tagine on low heat and pour in a generous amount of olive oil. Add the diced red onions, followed by the spices (paprika, turmeric, black pepper, and salt) and minced garlic. Give everything a good stir with a wooden spoon so the onions are well coated in the aromatics.



Step 2: 

Add the Sweet Raisins
Once the onions start to soften and sizzle in the seasoned oil, scatter the sweet raisins right over the onion bed. Let them cook together for a couple of minutes until the onions become soft and translucent.

Step 3: 

Layer the Kefta Meatballs
Now, gently place your pre-shaped meatballs one by one over the bed of caramelized onions and raisins. Arrange them neatly until the tagine is fully filled.




Step 4: 

The Final Touch and Slow Cook
Sprinkle freshly chopped cilantro over the meatballs for that vibrant pop of color and extra fresh aroma. Cover the tagine with its clay lid and keep the heat low. Let it slow-cook gently until the meatballs are perfectly juicy and cooked through.
