Moroccan Mint Tea, traditionally known as "Atay," is much more than just a refreshing drink. It is the ultimate symbol of Moroccan hospitality, warmth, and tradition. In every Moroccan home, serving tea is a ritual of welcome and friendship. If you want to bring the authentic flavors of Morocco into your kitchen, this step-by-step guide will show you exactly how to brew the perfect cup with a beautiful golden foam.
Ingredients:
1 tablespoon of high-quality Gunpowder Green Tea leaves.
A large handful of fresh, vibrant spearmint leaves.
White sugar (to taste, traditionally served sweet).
Boiling water.
Step-by-Step Instructions:
1. The Rinse (The Soul of the Tea)
First, place the gunpowder green tea leaves inside your teapot. Pour about half a cup of boiling water over the leaves. Swirl the teapot gently for about 10 to 15 seconds, then pour the liquid into a clean glass and set it aside. Do not throw this liquid away! This first pour holds the "soul" and essence of the tea flavor.
2.Washing the Leaves
Pour another half cup of boiling water into the teapot, swirl it around quickly, and this time, pour the liquid out into the sink. This step washes away the bitterness and cleans the tea leaves, ensuring a smooth finish.
3.Steeping the Base
Return the first glass of tea (the "soul") back into the teapot. Fill the teapot with boiling water and place it on low heat for about 3 to 5 minutes until it begins to simmer. This allows the tea leaves to fully open up and release their deep flavor.
4.Adding Mint and Sugar
Remove the teapot from the heat. Gently press your fresh mint leaves inside the pot, then add sugar according to your taste.
5. The Aeration (The Famous High Pour)
To mix everything perfectly and create the traditional Moroccan foam (called "Rezza"), pour the tea from a high distance into a glass, and then pour it back into the teapot. Repeat this process 2 to 3 times. This cools the tea to the perfect drinking temperature and aerates it beautifully.
