Traditional Steamed Semolina

Seffa Smida is a traditional Moroccan dish made with steamed semolina, butter, milk, and sugar, then beautifully decorated with powdered sugar, cinnamon, and toasted almonds. It’s simple, comforting, and perfect for family gatherings or a sweet Moroccan breakfast or dessert.

🕒 Prep Time

  • Preparation: 10 minutes
  • Steaming: 30–35 minutes
  • Servings: 4–6

🥣 Ingredients

  • 500 g fine or medium semolina
  • 1 glass of milk
  • 50 g butter
  • 2–4 tbsp powdered sugar
  • 1 pinch of salt
  • Raisins, optional
  • Ground cinnamon
  • Toasted almonds

👩‍🍳 Instructions

1. Prepare the Semolina

Place the semolina in a large bowl. Add a pinch of salt and sprinkle with a little water. Mix gently with your hands until the semolina is lightly moistened.

2. First Steaming

Transfer the semolina to the couscoussier and steam for 15–20 minutes.

3. Second Steaming

Remove the semolina and separate the grains gently with a fork. Sprinkle with a little water, mix, and return it to the couscoussier for another 15 minutes.

4. Add the Milk & Butter

After the final steaming, transfer the hot semolina to a bowl. Add 1 glass of warm milk, followed by the butter and powdered sugar. Mix gently until well combined.

5. Add Raisins

If desired, add raisins and let the seffa rest for a few minutes so the flavors can come together.

6. Decorate & Serve

Shape the seffa into a beautiful mound on a serving plate. Decorate generously with powdered sugar, cinnamon, and toasted almonds.

Serve warm and enjoy! 😋🇲🇦
