Authentic Moroccan Rfissa Recipe (Chicken, Lentils & Msemen)

Introduction

This traditional dish combines shredded msemen (or trid), tender chicken, lentils, onions, and aromatic Moroccan spices. Ingredients

For the Msemen (or Trid)

  • White flour
  • Fine semolina
  • Salt
  • Smen (Moroccan aged butter)
  • Ras El Hanout
  • A pinch of sugar
  • Baking powder
  • Baker’s yeast


For the Chicken

  • 1 whole chicken
  • 3 large onions, sliced
  • 2 cups cooked lentils
  • 2 tbsp fenugreek seeds
  • 4 garlic cloves
  • Fresh cilantro and parsley
  • Olive oil
  • Vegetable oil
  • 1 tbsp smen
  • Salt
  • 1 tsp black pepper
  • 1 tsp ginger
  • 1 tsp turmeric
  • 1 tsp Ras El Hanout
  • Saffron threads (or saffron seasoning)
  • Water

Optional Garnish

  • Fried almonds
  • Dates
  • Quail eggs
  • Crispy kataifi pastry with melted butter


Instructions

  1. Prepare the msemen or trid dough and cook into thin layers.
  2. Cook the chicken with onions, spices, garlic, herbs, oils, smen, saffron, and fenugreek until tender.
  3. Add the lentils and continue simmering until the sauce becomes rich and flavorful.
  4. Tear the msemen into bite-sized pieces and arrange them on a large serving platter.
  5. Pour the sauce over the bread, then place the chicken on top.
  6. Garnish with fried almonds, dates, quail eggs, and crispy kataifi if desired.
  7. Serve hot and enjoy!
