Moroccan Vegetable Stew: The Ultimate Healthy & Budget-Friendly Everyday Meal

'You can’t truly be Moroccan if you haven’t tasted Mreqa straight from a mother’s kitchen!'"

Mreqa (or Dwas) is without a doubt one of the most famous, budget-friendly, and healthy traditional dishes in Morocco. Passed down through generations, this heartwarming one-pot meal is the ultimate comfort food—bringing families together around the table for a quick, wholesome, and deeply satisfying feast.

Ingredients

500g beef or lamb (optional)

3 large potatoes, peeled and cut into wedges

3 medium carrots, peeled and sliced into sticks

1 cup fresh or frozen green peas

1/2 cup green olives

1/2 preserved lemon (quartered)

1 medium onion, finely chopped

2 cloves garlic, minced

2 tbsp fresh parsley and cilantro, finely chopped

3 tbsp olive oil

Spices: 1 tsp ginger, 1 tsp turmeric, 1/2 tsp black.                     pepper, 1 tsp salt, and a pinch of cumin.

1.5 cups water

Step-by-Step Instructions

Sauté the Base: Heat the olive oil in a pressure cooker over medium heat. Add the chopped onion, garlic, and meat (if using). Sauté for 5–7 minutes until the onions soften and the meat is lightly browned.

Add Spices & Herbs: Stir in the salt, black pepper, ginger, turmeric, and fresh herbs. Mix well to coat the meat and onions in the aromatic spices.

Simmer the Meat (Optional Step): Pour in 1.5 cups of water, seal the pressure cooker, and cook on medium heat for 30 minutes until the meat is partially tender. (If making a vegetarian version, skip this pressure cycle and proceed directly to adding vegetables).

Layer the Vegetables: Carefully add the carrot sticks first, followed by the potato wedges and green peas. Place the green olives and preserved lemon quarters on top.

Pressure Cook: Seal the pressure cooker again and cook for 30 minutes until the vegetables are tender and the sauce has reduced into a thick, golden gravy (mreqa).

Serve Hot: Transfer to a wide serving dish, arranging the potatoes and carrots neatly around the center. Serve warm alongside fresh Moroccan bread and Classic Shlada.
